Here's some of what I'm making this week:
Roasted mini peppers (Pour on low sodium veg broth and spices. Bake in preheated 400 oven till desired doneness.)
Roasted acorn squash (Pierce a few holes in the skin with a knife. Wrap in parchment paper and then in foil. Bake at 350 until soft to touch, about 30-40 mins.)
Water sautéed onions,to use in my cholent and in next week's soups and entrees
Chewy banana oatmeal cookies (download the recipe below). Great way to use up those sweet and speckled bananas!
