Cauliflower. Goes. Buffalo!


Check out my new way of bringing super healthy cruciferous vegetables to my Shabbos table. They are also great as leftovers during the week (if there's any left!) Kind of like the plant based version of buffalo wings.


The best part of this recipe is how easy this is to make, and being oil free*, it's low in calorie density, which is always a winner! Enjoy L'chvod Shabbos.


INGREDIENTS

1 cup almond flour

1/4 cup nutritional yeast

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/2-1 teaspoon Mrs Dash onion and herbs seasoning, other salt substitute of choice, or salt*.

1 teaspoon paprika

Optional but recommended: If you like it hot, add 1/4 teaspoon cayenne pepper and/or smoked paprika, to taste.

2/3 cup water

1 tablespoon Dijon or salt free mustard

2 24 oz bags frozen cauliflower, defrosted and drained (will crisp better)


INSTRUCTIONS:

Preheat oven to 350 degrees F.

Mix flour, nutritional yeast and seasonings in a bowl. Adjust seasonings to taste. In a separate bowl, mix water and mustard, then gradually whisk it into the flour mixture. It should resemble a thick batter.

Pour over cauliflower florets and mix well. Spread out on a parchment paper lined baking sheet and bake for 30 minutes or longer until desired crispness. I often leave my vegetables in the turned off oven once they are done to further crisp.


You can also try this in an air fryer or place the cauliflower on a baking rack (sitting in the pan) if you like it super crisp.


Level up! Great dipped into hummus, tahini, guacamole, plant based yogurt, or sour cream.

*CAVEAT! I know most recipes taste better with salt, oil, and refined sugars. Unfortunately, these additives can be harmful to one's health in many ways and cause cravings and overeating. (More about this in another post.)


For health and weight loss purposes, I try to substitute or reduce the amounts of these additives whenever possible. For those of you not already on my program, this might be hard at first, but it's definitely worth your while to start experimenting and getting your tastebuds used to the delicious flavors found inherently in natural foods and how wonderful they make you feel.
