Aviva's Vegetable Soup


For me, a cold day equals hot soup! This recipe was given to me by a dear friend who is always trying to "up her game" in everything she does. Making healthy dinners for her family is just one more way she tries. Thank you, Aviva!


Ingredients

2 onions, chopped

2 cloves garlic, crushed

2 stalks celery, sliced

2 carrots, sliced or 1 bag shredded

1 box of mushrooms, sliced

1 zucchini, sliced

Bag of riced cauliflower

Whatever other vegetables you have in the house that you want to throw in, fresh or frozen

1 handful split peas

1/4 cup tomato sauce or 2 T tomato paste

2 bay leaves

Salt substitute or salt and pepper to taste

Water to cover the vegetables


Saute onions and garlic in water. Add vegetables and split peas and remaining ingredients. Bring to a boil and let simmer till done. That was easy! Enjoy!
