Move over coleslaw, it's time to take cabbage to the next level!
My good friend (who happens to be an excellent cook) made this savory onions and cabbage as a side dish for my son's recent Sheva Brachos.
It really makes any plate pop with color and I saw that most people finished it to the last drop!
The best part is that it’s SO easy and quick! (Especially if you water sauté the onions in advance in bulk and buy shredded cabbage…*Healthy Living tips 101!*)
Ingredients:
2 onions, diced (yellow or red)
1 bag purple cabbage
1 bag white cabbage
salt substitute or salt to taste
black pepper to taste
Way #1: Directions:
Water sauté onions until translucent.
Add cabbage and sauté until it starts to shrink slightly. You can use a deep frying pan with a cover it to speed up the process. You want the cabbage to maintain it's crunchiness so don't over sauté.
Add seasoning to taste.
Way #2: Directions:
Place cut up onions and cabbage on a shallow roasting pan and roast until softened. Mix occasionally to prevent burning.
Add seasoning to taste.
(My friend said this method tastes even yummier and helps the cabbage keep its color better.)
Serve alone, over brown rice/legume pasta, or mixed with roasted white/sweet potatoes.
