Energy. Bites.

Have your bite and eat it too! This is a fantastic yummy way to get flax seeds* into your (and your family's diets) without anyone being the wiser.


Ingredients:

1 cup rolled oats

½ cup unsalted natural crunchy or creamy peanut butter*

⅓ cup date paste, raw honey or maple syrup**

½ cup ground flax seeds

1 tsp vanilla extract

Optional add ins: ½ cup sunflower seeds, slivered almonds, raisins, or high cacao chocolate chips


*Or raw almond butter. For nut free version, substitute tahini or sunflower seed butter.

**To make date paste, process soft pitted dates with a bit of water till pureed. If dates are not soft, let them soak in boiling water for 10 mins before processing.


Directions:

1. Combine all ingredients together in a bowl.

2. Form 1” balls using hands.

3. Arrange bites on a lined baking sheet and freeze until set, about an hour.


Makes about 16 balls. Enjoy!


*Note: It's been recommended by Dr. Michael Greger and other nutritional experts that you eat a tablespoon of ground flaxseeds daily for optimal health. Flaxseeds are a good source of many nutrients, including protein, fiber, omega-3 fatty acids, and several important vitamins and minerals. They improve brain health, cellular function, digestion, and regularity, and have been shown to prevent diabetes, high cholesterol, lower the risk of cardiovascular and cancer diseases, amongst other health benefits.


FYI, flaxseeds need to be ground because your intestines are unable to break down the tough outer shell of whole seeds. You can buy them preground or grind them in your blender or (specially designated) coffee grinder. Store in airtight container for easy use.
